I have determined my afternoons of Pinteresting do pay off once in awhile. Seeing this recipe pinned over and over, I thought I must be missing out on something. I guess its my personality. I feel like I’m always missing out on the latest craze. Though whats popular is not always good. Unfortunately, that reasoning doesn’t enter my mind when I’m in the moment.
Turned out that I was missing out. These (semi) healthy fritters were gorgeously crunchy, nutty and just melt in your mouth. Paired with smoked salmon for a bit of saltiness and a fried egg for creaminess, these made for a great light dinner.
Based on this recipe from smitten kitchen. I made a few adjustments adding besan flour for a bit of nutty flavour and chopped onions (for the lack of spring onions). They turned out amazing!
